Success in the Kitchen

An entire week of successful meal planning!

Loved it. It reminded Airan and me of a restaurant in Greeley, Hunan, where we used to dine far too often in our college days.


Day Two: Sauteed Salmon Steaks with cous cous and tomatoes (prepared mostly by Airan)
Good and good for you. And Sophie ate it like it was candy, which shocked us all.


I don't do peas. Otherwise, this recipe was great. And half of my kids devoured it. (I think Evie's on a hunger strike.)


Delish, and so easy! Thanks to Lady and the Tramp, Sophie loves to eat anything that looks like spaghetti. However, Evie's hunger strike continues. I'd like to get my hands on some real lo mein noodles and try this one again. The vermicelli was good, but I think authentic noodles would be even better.


Day Five: Risotto with Porcini Mushrooms and Mascarpone

Delicious, but it took forEVER to cook. Oh, and as far as the twins are concerned, this is "mac and cheese." Shhh.


Day Six: Rachel Ray's Chicken Piccata Pasta Toss per Anne Glamore's suggestion
I liked it, although I think I like this chicken piccata recipe better. Rachel's was probably easier and faster, and the family seemed to think the two recipes are equally good.

Tonight, it's back to chili-cheese tator tots.

What I learned from this week's adventure:
  1. Meal planning is smart! And not that hard!
  2. I need new knives in a bad way. (And someone has a birthdaycoming up...)
  3. When planning meals, remember to plan side dishes as well. Oops.
Now I'm working on next week's menu. Any suggestions?

I meant to post this on Friday, but my Internet connection went down and is STILL DOWN. I have the shakes from Internet withdrawal. I'm starting to have hallucinations about checking my email and playing World of Warcraft. If this goes on much longer, my sanity will be in serious jeapordy. Do you think the friendly coffee shop with the free wireless connections will mind if I just move in?

I still prefer the "crutches" method. That way Dad does all the cooking.
The only bad part is the pain in my leg.
If I EVER get better I will give this recipes a try. For the most part they look quick and easy. Now if I could just get your father to cut the icky skin off the salmon for me, so that I can pretend I'm not touching a fish.

a question about the salmon recipe: is the butter/soy sauce/garlic powder mixture to be used as a sauce? or do you combine it with the oil to sautee the fish?

Hey, AMO!
Use the butter/soy/garlic mixture to baste the salmon steaks once
they're in the pan. When the first side is down, load up the raw,
upward-facing side of the fish with generous amounts of the butter
mix. Then, after you flip it over, add a bunch more to the now-cooked
second side.

I hope you enjoy it! We had it two weeks in a row, and speaking as a
non-fish-eater, I loved it!

I made Rachael Ray's Swedish Meatball Stoup last week, and it was super-yummy. It's from her 365 book. Let me know if you don't have it, and I'll copy the recipe for ya. Really easy and soooo good. Not the most appropriate right now weather-wise, but I didn't care it was so good.
